About Our Chef
Executive Chef, Westin Phoenix Downtown Hotel and Province Urban Kitchen and Bar
Marco Garcia is the executive chef for The Westin Phoenix Downtown and its signature restaurant, Province Urban Kitchen and Bar. As executive chef, he is responsible for all culinary activities on the property, directing day-to-day operations of the restaurant, banquets, executive lounge, in-room dining and stewarding. He also leads the culinary team in developing and executing new inspired menus and recipes.
Prior to joining The Westin Phoenix Downtown, Chef Marco spent more than 12 years with Marriott International Inc. Beginning first with a position as a prep cook for JW Marriott Desert Ridge Resort and Spa, then as a kitchen supervisor for the banquets supervisor. He eventually moved to Renaissance Phoenix Downtown, where he spent nearly 5 years as its executive sous chef.
Over the course of his career, Chef Marco has developed a passion for sustainably harvested food. In that time he has cultivated relationships with local farmers and family-owned vendors, which he brings to his position at The Westin Phoenix Downtown. Ultimately, his goal is to use his knowledge to educate families on how to feed their families in a manner that is environmentally responsible.
Originally from Ambos Nogales, a border town of Arizona and Sonora, Mexico, his interest in cooking came from his mother and grandmothers. Together, they exposed him to foods culturally significant to his family including French, Poblano Mexican and Sonoran American cuisines. Chef Marco has served for four years as the co-chair of the annual Sabor culinary event hosted by CALA Alliance, an Arizona community based organization dedicated to educating about the richness of Latino cultural heritage.
